Large Batch Butternut Squash Soup

1 large butternut squash, peeled and cubed
2 onions, sliced thin
4 celery ribs, sliced thin
2 garlic cloves, crushed
4 cups vegetable broth

Simmer until all the veggies are soft.  

Blend in food processor or use a
submersible blender.

2 potatoes, peeled and chopped
1 yam, peeled and chopped
3 carrots, sliced thin
Add to soup and simmer slowly until cooked.

2 cans coconut milk
Frozen green beans
Frozen corn
Frozen peas
1 Tablespoon thyme
Salt and pepper
