Peanut Sauce

Saute:
1 large shallot, chopped
1 tbsp ginger, minced
2 garlic cloves, crushed

Add:
1 tsp curry powder
1/8 tsp crushed red pepper

Stir in:

1 cup veggie broth
1/2 c peanut butter
4 tsp lime juice
1 tbsp soy sauce
1 tsp agave nectar

Simmer till sauce thickens.

For a super smooth sauce, blend in
food processor.

Serve as a dip for veggies, or thin with
a little water and rice vinegar and mix
with cooked pasta.
