Zucchini Quiche

1 sleeve saltine crackers
2 tablespoons butter
4 zucchini, sliced and saute'd
1 Cup cherry or grape tomatoes, baked until soft
4 eggs
2 cups half and half
2 cups grated cheese
1/2 tsp each salt and pepper
1/4 tsp nutmeg

For crust:  In food processor, crush crackers, add
butter and mix for a minute.  Press into cake pan.  Bake
10 minutes at 350'.  (Optional:  add 1/2 jalapeno when
processing.)

Arrange zucchini in crust.  Heap 1 1/2 cups of cheese on
top.  Mix eggs, half and half, salt and pepper, and
nutmeg.  Pour over cheese.  Arrange baked tomatoes on
top and sprinkle with remaining cheese.  Bake at 350'
for 45 minutes or until inserted knife comes out clean.  
Let rest 10 minutes before serving.  Good cold, too!
